I have a not-so-secret obsession with Sir Kensington's avocado mayo.
I LOVE IT.
But I can't (well, shouldn't...) eat it straight out of the jar with a spoon. So I made turkey burgers with avocado slaw instead.
These turkey burgers with avocado slaw are super simple to make -- and pretty healthy, too.

Turkey Burgers with Avocado Slaw
You're going to start with the avocado slaw. All of the veggies are raw, so you just need to chop them up and mix them together with the mayo, lemon juice, and salt+pepper. Just use a cheese grater on the round raw veggies like the radishes and brussels sprouts.
It takes 2 minutes!
For the turkey burgers, combine the ingredients, form them into patties, and cook on medium-high for ~5mins/side. For some extra yumminess, toast your fresh pretzel bread into the same pan!
INGREDIENTS
For the avocado slaw:
- ~6 kale leaves, de-stemmed
- ~10 fresh basil leaves
- 3 radishes
- 3 brussels sprouts
- 1/3 cup avocado mayo (I used Sir Kensington's)
- 1 lemon slice
- Salt & pepper
For the turkey burgers:
- 1/2lb ground turkey
- 1/2 cup panko
- 1 egg
- 1 jalapeño, diced, seeds removed
- 1 bunch (~10) chives, thinly sliced
- Salt & pepper
- Fresh pretzel buns
INSTRUCTIONS
For the avocado slaw:
- -De-stem & thinly slice kale leaves
- Thinly slice fresh basil leaves
- Grate raw radishes & raw brussels sprouts (I just use a cheese grater)
- Combine all above ingredients in a medium bowl. Add the avocado mayo, 1 squeeze of lemon, and salt & pepper to taste.
- Set aside while you prepare & cook the turkey burgers!
For the turkey burgers:
- Combine the ground turkey, panko, egg, jalapeño, chives, and salt & pepper in a bowl
- Heat a large pan on medium-high & add oil
- Form turkey mixture into wide, thin patties & cook on medium-high, 5 minutes per side
- Slice fresh pretzel buns in half & heat in same pan, alongside the turkey, for the last 1-2 minutes (or just after the turkey is finished if you're using a smaller pan)
- Top burgers with slaw, and enjoy!
