Fried Mozzarella Burger with Bacon Jam!

This is one of those recipes that looks and sounds complicated, but is actually super simple.

The fried cheese only takes about 3 minutes to make, and the BUBBA burgers are cooked from frozen so they couldn't be easier. I've included recipes with step-by-step photos for the fried cheese, bacon jam, and burgers below.

Recipe: Fried Mozzarella Burgers

This fried mozzarella burger with bacon jam is super simple to make. Here are the steps:

  • Make the bacon jam: ~45 minutes
  • Grill or sauté the burgers: 10 minutes
  • Fry the cheese: 3 minutes

The BUBBA burgers and fried cheese couldn't be easier! And if you wanted to make things REALLY simple, you could even buy the bacon jam instead.

Here are some step-by-step approach for how to make everything. And please see the bottom of this post for the detailed ingredients and recipe to make the fried mozzarella burger!

How to Make Bacon Jam

Bacon jam is so delicious and adds a great flavor to this burger recipe.

Start by cooking bacon in a cast-iron skillet. When it's done, take it out, chop it up, and remove most (but not all) of the grease from the pan.

Next, sauté sweet onions in butter in the same pan. Cook the onions super low & slow for maximum deliciousness! This step takes about 15 minutes.

Finally, you'll add in the cooked bacon and remaining ingredients and continue to cook on low heat til they reduce back down. Here, I used light brown sugar, balsamic vinegar, apple cider vinegar, water, black pepper, and fresh thyme (see detailed recipe at the bottom of this post for the amounts!). This step takes about 20 minutes.

While you're making the jam, you can heat up the grill and get your ingredients prepped for the fried cheese too.

Grilling the Burgers

These BUBBA burgers couldn't be easier to make because you grill them from frozen. Heat your grill to 450 degrees and keep them in the freezer til you're ready to go. Then just add salt & pepper and grill til they're done!

Since there are a couple other elements to this recipe, it's helpful to keep the burger part as streamlined as possible - hence these one-step burgers. They're great to have on hand in the freezer - since they don't need to be defrosted before cooking, they're always ready to go for a quick meal.

We used the Angus BUBBA burgers for this recipe, which have just 1 ingredient (choice beef chuck) and no additives or preservatives. They have a bunch of other flavors too, including sweet onion, jalapeño, and bacon cheddar!

Note: if you prefer, you can also sauté the burgers instead of grilling them! You still cook the BUBBA burgers from frozen on the stove-top. The cook time is about the same, but it's faster overall since you don't have to heat up the grill.

How to Make Fried Mozzarella at Home

And now for the next part, the fried mozzarella! This is so much easier than you'd expect, but there are a couple things to note:

  1. You want to use low-moisture, full fat mozzarella because it is less likely to break apart when frying (fresh mozzarella won't work as well because of this)
  2. Go to the deli counter at your grocery store and get them to cut mozz into thick slices. I got two 1/4-inch slices. You could go slightly thinner if desired -- but don't go too thin, or it may not hold together when frying
  3. You want to get the vegetable oil really hot, but pay attention - the hotter it is, the quicker the cheese will fry!

To make the fried cheese, dip each slice into beaten eggs and then into your panko mix, and then drop it into sizzling hot vegetable oil until it's done. (See the recipe at the bottom of this post for the exact ingredients and amounts).

The mozzarella fries extremely fast - like 10-20 seconds max. So you'll want to take the burgers off the grill, dress them, and then pop the cheese in for a few seconds at the end. Make this the very last step, so the fried cheese is still sizzling when you put it on top of the BUBBA burger.

BUBBA Burgers with Fried Mozzarella and Bacon Jam

INGREDIENTS

For the bacon jam:

  • 1/2 lb thick cut bacon, cooked & chopped
  • 1 tbsp butter
  • 1 sweet onion, diced
  • 1/4 cup water
  • 1/8 cup apple cider vinegar
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh thyme
  • black pepper

For the burgers:

  • 2 Angus BUBBA burgers, frozen
  • salt & pepper
  • mayonnaise
  • arugula
  • 2 brioche buns

For the fried mozzarella:

  • 2 slices of low-moisture, full fat mozz (1/4-in thick)
  • 1 egg, beaten
  • 2 cups panko
  • 1 tbsp dried parsley
  • 1 tsp cayenne pepper
  • pinch of salt
  • vegetable oil (for frying)

Tools:

  • Cast-iron pan (or other heavy pan)
  • Grill OR sauté pan
  • Slotted spatula

INSTRUCTIONS

Recipe makes 2 burgers & takes ~1 hour including the bacon jam

For the bacon jam:

  1. Cook the bacon in a cast-iron pan & chop it up
  2. Remove most of the bacon grease from the pan; cook the diced sweet onions in butter on low in the same pan for ~15 minutes, stirring frequently
  3. Add the remaining ingredients (water, apple cider vinegar, balsamic vinegar, fresh thyme, and black pepper) and reduce for 15-20 minutes, stirring frequently
  4. Set aside until ready to use

For the BUBBA burgers:

  1. Heat grill to 450 degrees.
  2. Keep the burgers in the freezer until ready to use
  3. Salt & pepper both sides & throw them on the grill til done!
  4. Grill the brioche buns alongside the burgers for ~2 minutes at the end
  5. Remove burgers & buns from grill and add toppings: mayo, arugula, bacon jam

For the fried mozzarella:

  1. While the burgers are grilling, fill the cast iron with enough vegetable oil for frying and heat it up to sizzling but not smoking (when you flick water at it, it should sizzle)
  2. Beat 1 egg and pour on a plate
  3. Mix together the panko and seasonings (dried parsley, cayenne pepper, salt) and put on a second plate
  4. Dip the mozzarella into the beaten egg, then cover it in the panko mixture
  5. Right after the burgers come off the grill, use a slotted spatula to place the cheese into the oil to fry to desired doneness. This should take less than a minute! Repeat for the second cheese slice
  6. Place the sizzling mozz atop the BUBBA burger and enjoy
